Chicago's restaurants are roaring back to life, with COVID-weary patrons vying for tables and crowding onto outdoor patios. But for one of the most entrepreneurial segments of Chicago's dining scene, food trucks, the pandemic-era funk drags on. First cronuts, now this: a new Frankenstein donut dessert from Beavers Coffee and Donuts at their French Market shop and aboard their food truck. The mini donut shop has concocted a line of 16oz donut milkshakes that are customizable with sauces and toppings like Nutella, pecans, and coconut (it’s nice to see a donut shop that's open to experimentation, BASKIN-ROBBINS!). Donut guys challenge Evanston food truck law

The owners of a food truck filed suit today challenging Evanston’s rule that only owners of brick-and-mortar restaurants can operate food trucks in the city. Backed by the Liberty Justice Center, a Libertarian-oriented public-interest litigation group, the owners of Beaver’s Coffee and Donuts allege in their complaint, filed in Cook County Circuit Court, that the city ordinance violates the equal protection and due process clauses of the Illinois Constitution.
